Job description: Role: Chef/ Cook
Location: HMP Lowdham Grange, Nottinghamshire
Hours: Full-Time, Permanent
Salary: £21,956 per annum
Shifts: Staggered shifts between the hours of 6am and 6pm. It also requires the selected candidate to work 2 in 6 weekends which can be agreed with the other staff members.

Job Purpose:
To provide and carry out catering services within HMP Lowdham Grange, in accordance with all relevant and current regulations, legislation and guidelines.

Key Accountabilities:
* Assist the Catering Manager in the delivery of catering services to the establishment.
* Ensure that the catering operation complies with all relevant Health & Safety and Food Safety Regulations.
* Assist in prisoner movements and searches to and from the kitchen and wings.
* Provide varied and healthy menus for prisoners to include special diets, special day and religious events.
* Record and document all relevant paperwork to comply with food hygiene regulations, HACCP and Company Policies.
* Provide training and supervision to kitchen workers
* Maintain a comprehensive knowledge of Safer Custody, Violence Reduction, ACCT and Security responsibilities in line with local / national policies by attending refresher training as required in the training calendar.
* Complete incident reports, intelligence reports, use of Force paperwork and accident reports before leaving duty.
* Report all acts of wrongdoing through the Professional Standards procedure or by using the Whistle Blowing procedure outlined in the Service Management System.
* Conduct yourself in a way that contributes to a healthy workplace.

Key Skills:
* City & Guilds 706/1 & 2 or equivalent NVQ or similar in Food preparation and Production (Essential)
* Food Safety level 2 or 3 (Essential)
* Literacy and Numeracy Level 2
* Awareness of Hazard Analysis and Critical Control Point (HACCP)
* Awareness of allergen control within catering
* Basic computer skills including knowledge of Excel, Word and Outlook applications.
* Strong interpersonal skills
* Basic understanding of conflict resolution and de-escalation.
* Able to demonstrate resilience.
* Time management
* Good working knowledge of a large catering operation, ideally with a minimum of 3 years' experience in a similar post preferably within a custodial environment

Prison clearance is ideal but not essential.
