(Protein) Pancake Day Recipes

Whilst we have a very well stocked tuck shop here at Service Care HQ and people are very much partial to a treat, we also have quite a few people who are 'into' health and fitness and so I thought I'd do a blog with some recipes I've tried.

Increasing protein in your diet is really important as it helps with muscle growth / repair, makes you feel fuller for longer and has a high thermogenic effect (meaning it burns lots calories during digestion).

Simple Protein Pancakes

   
 Ingredients
• 3 large eggs or 1/3 cup egg whites
• 1/3 cup plain Greek yogurt
• 2 tbsp maple syrup
• 1/2 cup + 1 tbsp oat flour
• 1 scoop (30 g) whey protein powder (unflavoured or vanilla)

Instructions
1. Whisk together the eggs, yogurt and maple syrup.
2. Combine with the oat flour and protein powder
3. Pre-heat skillet/pan on a medium heat and spray with cooking spray. Pour in the batter (2-3tbsp for medium size pancakes).
4. Cook until bubbles appear but batter is still wet and flip (do not cook for longer as this will dry them out)
5. Top with desired toppings

Banana Pancakes

  

Ingredients

• 1 cup oats
• 1 banana
• 2 eggs
• 1/2 cup egg whites
• 4 teaspoons baking powder
• a pinch of salt
• a pinch of cinnamon
• 1–2 scoops protein powder
• 2 tablespoons flax meal

Instructions
1. Combine all ingredients in a blender until mixed well.
2. Pre-heat skillet/pan on a medium heat and spray with cooking spray. Pour in the batter (2-3tbsp for medium size pancakes).
3. Sprinkle in blueberries or chocolate chips if you wish.
4. Cook until bubbles appear but batter is still wet and flip (do not cook for longer as this will dry them out)
5. Top with anything you like! My favourites are almond butter and strawberries!

Cinnamon Bun Protein Pancakes


Ingredients
For the pancakes
• 3 x table spoons coconut flour sifted
• 1 x table spoons gluten free flour or oat flour or oat bran
• 1 x standard scoop of vanilla or cinnamon protein powder (30g) (optional)
• 2 x tsp Cinnamon
• ½ x tsp baking powder
• 1 x tablespoon granulated sweetener of choice
• 3 x large egg whites
• 1/2 x tsp vanilla essence
• 1/4-1/2 x cup almond milk or milk of choice For the cream cheese frosting
• 2 x tablespoons quark softened (fat free cream cheese)
• 1 x tablespoon sweetener of choice (adjust to taste)
• Pinch of cinnamon adjust to taste

Instructions

1. Whisk together wet ingredients, then add in and combine with the dry ingredients.
2. Pre-heat skillet/pan on a medium heat and spray with cooking spray. Pour in the batter (2-3tbsp for medium size pancakes).
3. Cook until bubbles appear but batter is still wet and flip (do not cook for longer as this will dry them out)
4. Mix together frosting ingredients and top pancakes with these.
